Fasting and low carb diets usually drop insulin so are effective for diseases of excessive insulin such as obesity, type 2 diabetes and PCOS. However, it may also have a smaller effect on inflammation so it may certainly benefit Hashimotos as well, but there are no studies to prove this, and I have only limited clinical experience with Hashimotos.
